Before I start rambling, I have to take a moment to thank Michelle for having me guest post. Of the many food bloggers that I adore, she has a special place in my heart because we share a similarity in cooking styles and tastes. At my house, we joke around and call Michelle one of my “second mothers” along with Stacy from Paleo Parents. Now look what I’ve done; I’ve begun rambling and I haven’t even gotten to the post.
The dish I’m writing about is Lamb Osso Bucco With Gremolata.
I’m in love with braising because the technique’s practically foolproof and almost always yields perfectly voluptuous, tender and flavorful meals. When braising meat, you can opt for tougher cuts because the low and slow cooking melts the tough connective tissue.
About 15,000 years ago, an old female wooly mammoth plunged through the ice as she was being chased by predators. Her remains have now been uncovered by scientists working in Siberia. And remarkably, as they were digging it out, blood began to stream out - wich is weird given that it was 10° below freezing.
It’s not known if the blood or tissue samples contain living cells required for cloning. And even if such cells are recovered, the DNA repair would require a very complex process that could take years. A report is expected later this July.
The beautifully preserved specimen was discovered partially embedded in a chunk of ice at an excavation on the Lyakhovsky Island, the southernmost group of the New Siberian Islands in the Arctic seas of northeastern Russia.
The mammoth’s lower portions, including the stomach, were locked in the ice for the past 10,000 to 15,000 years. Its lower jaw and tongue were also recovered; the trunk was found separately from the carcass. The upper torso and two legs were preserved in soil and show signs of being gnawed upon by both prehistoric and modern predators.
Semyon Grigoriev, head of the Museum of Mammoths of the Institute of Applied Ecology of the North at the North Eastern Federal University, is calling it “the best preserved mammoth in the history of paleontology.”
During the excavation, and as the researchers were chipping away at the ice, they noticed splotches of dark blood in the ice cavities below the mammoth’s belly. When they broke through with a poll pick, blood started to flow out.
“It can be assumed that the blood of mammoths had some cryo-protective properties,” noted Grigoriev. Mammoth blood, it would appear, contains a kind of anti-freeze. This is consistent with work done by Canadian geneticists who in 2010 showed that mammoth hemoglobin releases its oxygen much more readily at cold temperatures than that of modern elephants.
In addition to the blood, the paleontologists also recovered well-preserved muscle tissue. The scientists say it has a natural red color of fresh meat. The blood is currently undergoing a bacteriological analysis, and the results are expected soon.
Based on the preliminary evidence, the scientists say the female wooly mammoth was anywhere from 50 to 60 years old and weighed about three tons. They theorize that she was trying to escape from predators when she fell through the ice, or that she got bogged down in a swamp.
When it comes to chocolate pots de crème, there’s no messing around. With just one bite, you’ll taste the message loud and clear: These bittersweet pots de crème are intensely chocolatey, decadently full-fat, and proud of it.
I rarely indulge in sweets these days, but dark chocolate is my kryptonite — so when occasion calls for it, I’ll happily whip up a batch of dairy-free chocolate pots de crème. And my favorite ways to amp up the intensity of this special treat is with a touch of cinnamon, vanilla, and ancho chile powder — a flavor combination inspired by the rich, spicy kick of traditional Mexican hot chocolate.
This recipe is foolproof, provided you don’t rush things. Yes, I know it’s virtually impossible to exercise self-restraint when it comes to chocolate, but to ensure a silky-smooth ganache, staple these three tips to your forehead:
- Be patient when forming the base custard,
- Step away from the chocolate for a full five minutes while it’s melting, and
- Stir slooowly and deliberately when combining the melted chocolate and custard.
Trust me: you’ll be rewarded for your stoic Jedi ways.

Getting ready for Cinco de fucking Mayo? It’s one of my favorite holidays for bad decisions. This year you might make a couple shitty judgment calls but don’t start with your margarita mix. You see how many goddamn ingredients are in those fuckers? Red 40? WHATTHEFUCKISTHAT? Artificial flavors? GO FUCK YOURSELF. Don’t be serving up disrespectful drinks.
STRAWBERRY GRAPEFRUIT MARGARITA
¾ cup tequila (optional, but who are you kidding?)
¾ cup grapefruit juice (about 1 grapefruit)
¼ cup lime juice (about 3 limes)
1 cup frozen strawberries (whole strawberries are really fucking hard to measure. It was about 8 medium sized strawberries but extra won’t hurt a thing)
1 ½ cups ice
Blend that shit up.
If your fruit wasn’t super sweet you might need to add a little something extra like a teaspoon or two of whateverthefuck sweetener you like to use is fine. Personally I like agave but you can use honey or sugar. Serve this up immediately.
Make about 32 ounces, enough to relax 2 people
Food is good and all that but YOU REALLY FUCKING NEED WATER. I always drink one glass of water before each meal and another glass right after. Shit, that’s almost all the water you need in a day.
Feeling tired? Got a headache? Nauseous? Fuck those Rx commercials with their crazy ass side effects, drinking more water is the cheapest way to feel better. I drink mine straight but if you’re fancy as fuck then toss in some lemon, mint leaves, lime, cucumber, lemongrass. I don’t give a good goddamn, JUST DRINK IT.
some days I just go hard as fuck at the gym, that’s why thug kitchen keeps avocados stocked. not to mention all the other bad ass health benefits you get from this tasty mother fucker, like lowering the shit out of your triglycerides and raising your HDL. not to mention the fucking carotenoid lutein that helps prevent eye sight degeneration and cataracts. how about all the fucking folates in avocados that lower the risk of stroke? this shit also inhibits cancer growth.

seriously though, mayo is fuckin nasty. ain’t nothing in there for nobody. ugh.
To perform the Diagonal Stretch follow these 5 steps:
A. Stand with your heels together but toes out with 90 degree angle (45 off the center line on each side) between your feet.
B. Align your right foot toes behind your left heel and glide backwards on an imaginary line drawing out of your left heel. You will achieve a lunge position with the front foot in External Rotation (45 degree off center line) and back foot with raised heel and on the toes, not rotated any more - but straight forward on the center line. (examine the feet orientation in the photo)
C. Put your right hand on your heart and let the elbow relax on the body.
D. Take the left hand and reach behind you towards your desired target - back of the right knee, mid calf or heel. Arch back and rotate but don’t bend down to reach for your target.
E. Hold for 30-60 sec. Yes, you heard me right. Yes, I know its a humbling experience.
If you get an early case of Parkinson’s disease, don’t despair. Keep working it and perform 3-5 sets alternating legs.
